Let's get right down to it. I know you're hungry just looking at these pictures and you just want the recipe already. But let me just say- quesadillas are one of Mexico's greatest gifts to the world (second to Chipotle, of course). Who doesn't love cheese melted all over those savory vegetables, stuffed into a tortilla and just grilled to perfection. Cut into beautiful wedges with the stuffing just peeking out oh so slightly like it's playing peek a boo. Ok, more like bursting out because it's so awesome that the tortilla can't even hold it all in. It's literally screaming in your face "PLEASE EAT ME." And served with a side of avocado spread.




Ok now that I've managed to make your mouth water, I'll give you the list of top secret ingredients.

What you need:
2 avocados
Trader Joe's Multigrain Flour Tortillas
4 cups Mozzarella Cheese

What about the rest of the stuffing stuff? Ok, you can go on of two ways. Or go both ways. Whatever floats your boat, I don't judge. Don't have to be conventional. We are far from conventional in the kitchen! Have you seen that Saag Mozzarella post Shreya put up? WHO EVEN DOES THAT? But it's delicious so check that out! But I digress. Back to the quesadillas! 

Stuffing #1:
Trader Joe's Silver Goat Chevre w/ Garlic & Herbs Goat Cheese
1/2 roasted red pepper
2 cups of spinach, washed, rinsed, everything you need to do to clean it up
1 small onion
3-4 mushrooms
1 tbsp rosemary
1 tbsp thyme
(^ yeah that's right. I put a little Italian in my Mexican. It's cool, taste it)

Stuffing #2:
1 can black beans
1/2 roasted red pepper
1 large tomato
1 small onion
1 tbsp Cumin
1 tbsp Paprika
Garlic is awesome too, if you're into that kinda stuff

Put all your stuffing into a pan, maybe coat the pan with some oil first. All those basics I'm sure you already know. Get it all cooked. If it looks somewhat like this, then you're doing it right.


Get your avocados ready. Cut 'em up, mush it up and whip it into a beautiful, spreadable chunky butter like substance. #swag 

All right so here's what we do. It's pretty simple, actually. Put that tortilla on the pan, small flame. Medium if you're trying to live on the edge and don't mind burning your tortilla.  Flip that tortilla over. 

Ok, I know you're trying to be dangerous and all, but now is a good time to put that flame on the down low. You must or else you might seriously burn your quesadilla and no one will eat it. Sad, empty quesadilla-less stomachs are not cool. Just saying.

Now! Line half of your tortilla with some cheese. Put on the stuffing. Some more cheese. Word. Look at that beauty. Watch it melt. Aww look, it's hugging the stuffing. SO CUTE. I cannot even. I just can't handle this right now.

Now fold over the so the cheese on top sticks to the really sad looking other half of the tortilla. Unite them, and with your blessings flip the tortilla. This is further warm up on the once very lonely half of the tortilla and get the cheese to bond to it. Now you are finally one! And thus, I pronounce you a fully cooked quesadilla. Congratulations, you may now cut the tortilla in half and stuff it into your mouth.
